26 Weeks and a Recipe!

26 Weeks - Thursday, February 10th
{14 inches from head to heel, 1 2/3 pounds, length of an English hothouse cucumber}



Baby Moss is growing!  It's hard to believe that there is a 14 inch long baby in my tummy.  Funny that Baby Center's analogy is a cucumber, Walker's least favorite food.  Always makes me laugh as they have little to no taste to me, but to him, they are overwhelming.  Interesting how our taste buds differ!

The baby's ears are starting to develop more and he may be able to hear us talking.  Better start watching what we say as we may have a little eavesdropper around :).

On Sunday night, for the Super Bowl, we made a fantastic batch of Chicken Noodle Soup with the help of Honey's homemade recipe.  Even though I have no interest in the game {or even the commercials for that matter}, the Super Bowl will always be a significant annual event in our family as Walker and I met for the first time at a Super Bowl party in 2008 {Giants vs. Patriots with Tom Petty at halftime}.  What a great way to celebrate the Super Bowl this year over a bowl of hot Chicken Noodle Soup! 

I don't have any pictures, but the recipe is as follows:

Honey's Chicken Noodle Soup

Ingredients:

1 whole organic chicken
1 medium onion
1 to 2 cups of carrots, chopped
1 to 2 cups of celery, chopped
1 can of cream of chicken soup
3/4 bag of fine egg noodles
Salt and pepper, to taste

Directions:

Fill a large pot with water to cover the chicken and onion.  Bring to a boil, then simmer for 1 hour on low heat until chicken is cooked thoroughly. Discard onion.  Remove chicken from pot and let cool.  Skim any fat from the top of the stock.

Add the carrots and celery to the stock and boil for 30 minutes until tender. 

Stir in the cream of chicken soup using a whisk to mix well.

Add the egg noodles and chopped/pulled chicken to the stock.  The egg noodles will cook quickly; therefore, be careful not to over cook as they will turn mushy. 

That's IT, and it is delightful!  Give it a try!
